On land or at sea, there’s really not too much to be done with a drunken Somm. Calling their partner at home usually results in a loud argument and not much else. Multiple cups of coffee take too long and there’s a good chance of an unexpected collapse at tableside.
Threatening to transfer them to a family-friendly restaurant and take drink orders from six year olds is probably the best way to sober them up fast- but the Beverage Director is probably going to have to work the room that night in any case...
